One pot brownie
Ooooh I am so excited. The little kid in me is jumping with joy that I am finally sharing my family’s one-pot brownie recipe. I am salivating as I’m writing it. Let me tell you why. I come from a poor family. My parents have always worked long hours to be able to provide me and my brother with the bare necessities. So most of our “sweets” were basically apples in different forms: the simplest apple pie, grated apples, and apple compote. Which is why it was an honor to make this recipe. A little sweet, a little chocolaty, spongy, and delicious!
As a kid, I always helped my mom make this brownie. She would set up either a mixer or a bowl with a spoon, and she would tell me all the ingredients needed. I would run around the kitchen to get them all, wait while my mom added them in, and then run to put the ingredients back in all the cupboards.
You have to let the brownie cool a bit, but otherwise, you can serve it however you want. It goes well with a few scoops of ice cream as a dessert. It goes well with a glass of milk for a sweeter breakfast. This brownie also works well as a quick snack when guests are due to arrive any minute. Also, your house will smell amazing, especially if you add any fruits or nuts on top! I like to keep it simple, so I add just a bit of icing sugar on top.

Ingredients
1 egg
1 cup of whole milk
1 cup of sugar
1/2 cup of sunflower oil
2 cups of white flour
2 tablespoons of cocoa
2 tablespoons of jam (apricots or cranberries)
1 teaspoon of baking soda
1 teaspoon of baking powder
Icing sugar for décor
Directions
- Preheat the oven to 160 °C. In a bowl, add the egg and sugar. Mix together until the sugar is melted. Add in the oil, milk, cocoa, and jam. Mix well together. Add in the sifted baking soda and sifted flour. Mix until well combined.
- Coat the baking tray with some butter and sprinkle with white flour until the whole tray is covered. Pour in the mixture from the bowl. Place on the middle rack and cook for about 20–25 minutes. Take it out once it’s ready and do the toothpick test to check that the middle is properly cooked. Sprinkle the icing sugar once it is ready.
Notes
- This cake can be served as is or can serve as a base for other cakes or fruit tarts. Fresh fruits like strawberries, cherries, sour cherries, cranberries, and apples can be added to the batter before baking.
