Fresh cabbage soup is a comforting and nutritious dish that combines tender cabbage with an array of vegetables and flavorful seasonings. This hearty soup is easy to prepare and perfect for warming up on chilly days.

Ingredients

  • 1 medium-sized fresh cabbage (about 500–600 grams)

  • 150 grams bacon (or other type of smoked meat)

  • 1 liter tomato juice

  • 2 tablespoons all-purpose seasoning (Vegeta mix)

  • 2 teaspoons dried thyme

  • 2 teaspoons dried dill

  • 1 teaspoons ground white pepper

  • 3 tablespoons vegetable oil

  • 2 tablespoons all-purpose flour

  • 2.2–2.3 liters of boiling water

  • Salt to taste

  • Ground white pepper to taste

Directions

  • Start by roughly cutting the cabbage, and then cut the bacon or smoked meat into cubes. In a pot, add the smoked meat, and cook until it’s halfway done. Add most of the boiling water (keep about 100 milliliters for a different step down the road). Bring to a simmer and reduce the heat to medium-low. 
  • Add the cabbage, the all-purpose seasoning (vegeta mix), dried thyme, dried dill, and ground white pepper. Cover, cook, and stir occasionally until the cabbage softens. This should take about 15 minutes. 
  • Toward the end of the 15 minutes, in a small pan over medium heat, add the oil, and once heated, add in the flour and stir continuously until the composition starts changing color to a light brown. Turn off the heat. Take the remaining 100 milliliters of water and pour it in at once while stirring to avoid the formation of lumps.
  • Add the mixture to the pot and add the tomato juice. Cook for an additional 5–10 minutes, once simmering. It is best served warm with a hefty spoon of sour cream.

Notes

  • If you want to make the soup vegetarian, you can replace the meat or bacon with smoked tofu, or 1/2 tsp of smoked paprika.
