But it also helps them release easily from the pan. As for the swirling motion, it may take a bit of practice to get the hang of it. We tried it a few times, and both me and my husband got the hang of it in a few tries.

Made with basic pantry staples like flour, eggs, milk, and a touch of vanilla essence, these crepes are light, airy, and irresistibly delicious. Whether you’re enjoying them for breakfast, brunch, or dessert, each bite of these thin, golden pancakes is a delight for the senses. Top them with your favorite sweet or savory fillings, from fresh fruit and whipped cream to savory ham and cheese, and let your culinary creativity shine. With this easy recipe, you’ll be whipping up perfect crepes in no time, delighting friends and family with your culinary prowess.

Ingredients

  • 400 grams all-purpose flour

  • 3 whole eggs

  • 1 tablespoon vanilla essence

  • 80 milliliters vegetable oil

  • 1 cup sparkling water

  • 1 1/2 cups whole milk

  • 1 pinch of salt

  • Vegetable oil for cooking

  • Optional: 2 tablespoons dark cocoa for dark crepes

Directions

  • In a bowl large enough to fit all the ingredients, add the eggs, a pinch of salt, vanilla essence, and vegetable oil. Whisk them together until you have a homogenous mix.
  • Continue by adding the all-purpose flour, sparkling water, and milk. Whisk together until well combined and there are no clumps in the mix.
  • Optional step: Divide the mixture into 2 equal parts. In one of the halves, add 1-2 tablespoons of dark cocoa and mix thoroughly until well combined and there are no pockets of air or clumps of cocoa left. 
  • Over medium-low heat, place a 28 cm/11 inch pan and brush a little vegetable oil. Once the oil is heated, use a ladle to add the batter (I’m using a ladle that holds about 130 milliliters/4.4 fl oz) and spread it as much as possible to get a thin batter layer, and cover the pan as much as possible.
  • Cook on both sides until golden brown (about 40–60 seconds on each side). Once ready, place them on a plate and cover them with a tablecloth to keep the crepes soft and fluffy. Repeat the process for the remaining batter. Best served warm with a topping of your liking (fruit jams, chocolate spread, bananas, peanut butter, and many, many more). 

Notes

  • Serve with whatever toppings you want, sweet or savory. We normally serve ours with chocolate cream or a fruity jam.
