Ingredients

  • For the rice pudding
  • 450 milliliters whole milk

  • 100 grams white rice

  • 1/2 vanilla pod

  • 35 grams sugar

  • 1/2 teaspoon salt

  • 1 liter water

  • For the caramel sauce
  • 20 grams white flour

  • 1 whole egg

  • 65 grams sugar

  • 50 milliliters water

Directions

  • In a pot over medium heat, add the milk, 35 grams of sugar, and the scooped-out vanilla seeds. Bring to a simmer. Add in the white rice and cook until the rice is done. Make sure you have a stew-like composition. If required, you can add some extra milk. Set aside once ready.
  • In a bowl, add the egg, flour, and 15 grams of sugar. Mix well together and stir until most of the sugar is melted. In a different pot, add the remaining sugar (50 grams) and melt it over medium heat until golden brown. Add the water and stir until the melted sugar is incorporated. Add in the egg mixture and stir continuously until the mixture turns into a creamy caramel sauce. Take it aside once ready.
  • On a plate, place the creamy rice and top with the caramel sauce. Leave to cool for several minutes, then serve warm.
