Ingredients
400 grams crab sticks (or salmon)
100 grams cream cheese
50 grams kewpie mayo
1-2 nori sheets
10 grams Cajun seasoning
1 cup rice
2 cups water
2 tablespoons of rice vinegar
1 teaspoon sugar
1/2 teaspoon salt
Directions
- Preheat your oven to 200°C. Wash your rice in 2-3 waters until the water runs clean. In a small pot, add the water, and when it starts to bubble, add the rice. When it starts to simmer, cover and leave alone for 15 minutes. When the 15 minutes pass, uncover and add over a cloth and cover again and leave for another 5 minutes. Fluff the rice with a rice vinegar mix: rice vinegar, salt and sugar.
- If you have crab sticks: take them out of their small packages and use 2 forks to shred them in a bowl. You can also cut them if you want equal pieces, but I like them stringy.
If you have salmon: Clean the salmon. In a pan, add a little oil to cover the bottom, and add the fish when the oil is shimmering. Cook for 3 minutes on the first side, flip, and leave in for another minute. Take the fish out on a plate or a cooling rack and let it cool down. - When the fish is cooled, add it to a bowl with the kewpie mayo, half a thinly sliced nori sheet, cream cheese, and Cajun seasoning to taste. If your Cajun seasoning does not include salt or pepper, taste the mix and add if necessary.
- Line a 27 cm oven-safe tray with the baking sheet and add the rice. Level the rice well and add the crab stick/salmon mix and spread it evenly.
- Bake in the oven for about 20 minutes. Take it out and let it cool a little bit before serving. Can be served as is or using small squares of nori sheets.
Notes
- Serve in cubes with broken pieces of nori sheets, together with pickled ginger or radish and wasabi.
