Ingredients
1 kilogram potatoes
1.5 liters vegetable or chicken soup
3 whole garlic heads
200 milliliters cooking cream
2 tablespoons unsalted, 82% fat, butter
1 medium onion
8 tablespoons vegetable oil
Salt to taste
Ground black pepper to taste
Directions
- Preheat your oven to 180 °C. Get the potatoes in a bowl, unpeeled, and wash them thoroughly. Drain the water and add 3 tablespoons of vegetable oil and some coarse salt. Massage the potatoes to spread, as best as possible, the oil and the salt.
- Place the potatoes on a tray lined with parchment paper and bake for about 20 minutes. While the potatoes are cooking in the first phase, take your garlic, cut the top of the head, sprinkle a tablespoon of vegetable oil, some salt, and wrap them in tinfoil.
- After the first 20 minutes have passed, take out the tray, turn the potatoes, add in the wrapped garlic heads, and place it back in the oven for the next 20 minutes phase. You can now make your own vegetable soup or use a pre-made one. After the 20 minutes have passed the second time, take out the tray and turn your potatoes again for a third and final time. Bake for another 20 minutes. When ready, take out the tray and let everything cool down.
- Peel the potatoes, cut them into smaller pieces, squeeze out the baked garlic in a bowl, and chop the onion. In a pot over medium-low heat, add the remaining 2 tablespoons of vegetable oil and fry the onion until translucent. Add the cubed potatoes and the vegetable soup. Boil for about 20 minutes. Turn off the heat, add the baked garlic, the cooking cream, and one garlic clove raw, pressed. And blend everything together until you get a smooth, creamy soup. Serve with fried bacon bits, or any other topping you love. Enjoooy!
Notes
- The soup can be made with low-fat or even non-dairy alternatives, making it a healthier option without sacrificing flavor.
- You can take out the heavy cream if you don’t want it, but add in the veggie/chicken soup slowly to reach a creamy consistency. You will not need the whole 1,5l of soup.
