Ingredients
100 grams white rice
400 grams of tomato puree
2 small onions
1 medium yellow bell peppers
1 liter water
2 tablespoons vegetable oil
1 cube or 10 grams of vegetable bullion
Salt to taste
Ground black pepper to taste
Optional: Other veggies of your liking: carrots, red bell peppers, zucchinis, etc.
Directions
- Clean and chop your veggies. Wash the rice until the water is clear. In a pot over medium heat, add the oil and the onions. Sautee the onions until translucent.
- Add the yellow bell pepper and sauté for about 5–10 minutes. Add in the tomato puree, and If the liquid is not enough, make sure to add some of the water. Cook for about 10 minutes.
- Once the veggies are cooked, add the washed rice and gradually add in the water and the vegetable bouillon. Cook until the rice is cooked (about 25–35 minutes). Adjust salt and black pepper to taste.
Notes
- This is one of the most versatile and loved dishes in our household, as you can use basically any veggies you like or the ones that are available in different seasons.
