Easy mix-and-bake cottage cheesecake
This is one of my family’s easiest cheesecake recipes. We always make it on Easter! But also any other time we want to have something sweet but easy to make. My husband is the one who prefers to make the sweets in our family because I usually do not have the patience for them. But this easy mix-and-bake cottage cheesecake recipe is different! The ingredients are mixed in two large bowls, then the two concoctions are mixed together, and then they are put in the oven to bake.
If you have a little one to help you with the desserts, they can help you by adding the egg white mix to the cheese mix. When I was younger, my mom would always make me separate the eggs and help with the mixing.
The traditional recipe is to use raisins, but if you want, you can choose a different type of dried fruit or a tart fruit. I would recommend something that is not too sweet or overpowering. The cheesecake’s taste and its fluffiness should be the stars. You can also not add any fruit; the taste would be just as great.
Take note that the cheesecake will puff up a lot when in the oven. However, when you take it out, as it cools, it will deflate. You might also see some craters form here and there on the surface. The end result will be a semi-deflated cheesy goodness that will jiggle slightly!

Ingredients
800 grams cottage cheese
200 grams sour cream
200 grams raisins
6 eggs
12 tablespoons sugar
5 tablespoons white flour
1 sachet baking powder
1 sachet vanilla sugar
1 pinch of salt
Lemon zest
2 ml Vanilla essence
Optional: Icing sugar for décor
Directions
- Preheat the oven to 160°C. Divide the egg yolks from the egg whites. In a bowl, add the cottage cheese and mix it together with the egg yolks, sour cream, sifted white flour, and baking powder. Mix until combined. Add in the lemon zest, a pinch of salt, and the vanilla essence.
- Mix the egg whites, and once you have a white foam, gradually add in the sugar – one spoon at a time – and mix until you have cones on the mixer paddles. With a spoon or spatula, gradually add the egg white mixture to the cheese mixture while mixing gently.
- Pour the mixture into a tray lined with parchment paper and set it in the oven on the middle rack. Bake for about 40–50 minutes. Once ready, take it out of the oven and leave it to cool. Remove from tray only once cooled. Sprinkle with the optional icing sugar.
