I was amazed at how simple the process was and how impressive the result looked on the plate. The rolls were perfectly cooked, with a beautiful green color on the outside and a colorful and flavorful filling.

Ingredients
1-1.2 kilograms zucchini (see step 1)
200 grams cream cheese
150 grams thinly sliced ham
3 whole eggs
2 tablespoons sour cream
1 medium pickled cucumber
1 medium red onion
1 teaspoon garlic powder
1 teaspoon ground white pepper
Small bunch of fresh dill
4-5 spritzes of vegetable oil
Directions
- Start by cleaning and peeling the zucchinis. Wash them thoroughly once peeled, cut them in half, remove the seeds if necessary, and coarsely grate them. Sprinkle some salt on them, mix well, and let them sit for 15 minutes to eliminate the excess moisture.
- After 15 minutes have passed, strain the grated zucchinis either by hand or with a mesh cloth. Get out as much zucchini juice as possible. Set the strained zucchinis into a bowl, break in the eggs, and add the teaspoons of garlic powder, ground white pepper, and the finely chopped dill. Mix well until you have a homogenous composition.
- Preheat your oven to 180 °C or 356 °F. On a flat tray lined with parchment paper spread the zucchini mixture as thinly as possible. Make sure to have a one-piece mix, without any holes or patches with missing mixture. Place in the oven on the middle rack and cook for 10 minutes with heat from under and 15 minutes with above and below heat.
- While the zucchini mixture is baking, you can move on to make the filling. In a bowl, add the cream cheese, sour cream, finely diced onion, and finely diced pickled cucumber. Mix well until all the elements are combined.
- Take out the zucchini mixture once it’s ready, cover it with a moist cloth to retain it’s flexibility, and let it cool. Once cooled, remove the moist cloth, spread the cream cheese mixture, add the thinly sliced ham, and start rolling. It’s best served cold after a few hours in the fridge, buuut if you can’t wait, just like we can’t, you can serve it immediately. Enjoooy!

- You can also make the recipe lacto-ovo vegetarian if you don’t add the ham.
