Carrot and potato cream soup

2-3 large potatoes
2 medium onions
1 2.5 cm slice of celery root
2 medium carrots
7-8 garlic cloves
2 vegetable bouillon cubes (20 grams)
20 milliliters vegetable oil
200 milliliters cooking cream (20% fat) / a plant-based cooking cream for the vegetarian/vegan option
1 teaspoon dried thyme
1 teaspoon dried oregano
1 teaspoon ground white pepper
Salt to taste
1.3 to 1.5 liters boiling water
Directions
- Start by cleaning the potatoes, onions, celery root, and carrots and cutting them into pieces of approximately the same size. Peel the garlic cloves, and in a pot over medium heat, add the oil.
- Once the oil is heated up, add in the onions and cook for several minutes until they start turning translucent. Continue adding in the garlic and cooking for about 1 minute, until the garlic is fragrant.
- Now you can add in the celery root, potatoes, and carrots and cook them for several minutes while stirring frequently.
- Top off the veggies with the boiling water, bring it to a simmer, and reduce the heat to medium-low. Add the vegetable bouillon cubes, dried thyme, dried oregano, and the ground white pepper.
- Boil for about 25 minutes, and make sure to check the vegetables are cooked through (the carrots and the potatoes, especially) by poking them with a fork. Slight or no resistance means your veggies are ready for the next step.
- Take the pot off the stove and blend all the elements together until you get a smooth, cream-like texture. Place the pot back on the stove over medium heat.
