minutesStuffed bell pepper soup offers all the delicious flavors of classic stuffed bell peppers in a comforting and hearty soup form. Ground pork meat, cooked rice, and vibrant bell peppers are simmered in a flavorful tomato-based broth until tender and aromatic. This satisfying soup is perfect for chilly days and makes for a wholesome meal when served with crusty bread or a side salad.
Ingredients
500 grams minced pork meat
750 milliliters tomato juice
7-8 medium bell peppers (preferably yellow)
30 grams white rice
35 grams white flour
3 tablespoons vegetable oil
3 liters water
2 cubes vegetable bouillon (or 20 grams)
Salt to taste
Ground black pepper to taste
Directions
- Remove the stem and seeds from the bell peppers while making sure they remain as whole as possible. Set them aside. In a bowl, mix the minced meat with the white rice and season with salt and pepper.
- Take the bell peppers and fill them with the mixed minced meat. If you have some minced meat left after filling the bell peppers, you can make meat balls.
- In a pot over medium heat, add the water and, once boiling, add the vegetable bouillon cubes. Then, carefully add in the filled bell peppers (and the meatballs, if any). Reduce the heat to low and cook for 35–40 minutes. Taste a small piece of the bell pepper filling (or a meatball), and if cooked, add the tomato juice and bring it to a simmer.
- While the soup is simmering, take a new small pan and place it over medium heat. Add the oil, and once heated, add in the flour and stir continuously until the composition starts changing color to a light brown. Turn off the heat. Take a glass of cold water and pour it in at once while stirring to avoid the formation of lumps.
- Add the mix from the pan to the pot and let it simmer for about 10 minutes. Adjust salt and pepper if necessary.
Notes
- Although it might sound strange, you can add 1 teaspoon of sugar when serving.
