Semolina Dumpling Soup is a comforting and hearty dish made with flavorful chicken broth and tender semolina dumplings. This classic soup is enriched with wholesome vegetables like carrots, onions, and celery, creating a satisfying and nutritious meal that’s perfect for any occasion. Enjoy the warmth and nourishment of this timeless soup recipe!

Ingredients

  • 2-3 pieces chicken carcass

  • 4 liters cold water

  • 2-3 medium carrots

  • 2 whole eggs

  • 1 onion

  • ¼ celery root

  • 1 large parsley root

  • 90-100 grams tablespoons semolina

  • A pinch of baking soda

  • 5 grams black peppercorns

  • Salt to taste

Directions

  • Wash the chicken pieces, clean your vegetables, and cut them into larger pieces and set them aside. Place the cold water in a pot over medium heat and add the chicken carcass. When the water starts boiling, reduce the heat to low to medium-low and start removing the foam that gathers on top with a slotted spoon. Repeat the process until most of the foam is removed.
  • Once most of the foam is removed, add your veggies and the black peppercorns. Let it simmer for about 20–25 minutes.
  • While the soup simmers, take a bowl and crack in the egg. Mix in the semolina and the sodium bicarbonate until you have a homogeneous, thick paste (you need to be able to scoop out the paste with a teaspoon). Adjust with semolina if necessary.
  • Remove the pot from the stove and strain the soup into a new pot. Place the new soup pot over medium-low heat and add one teaspoon of the semolina or egg paste at a time. Submerging the teaspoon with the paste into the soup should easily remove it from the spoon. Cook for about 15 minutes once all the dumplings are in.
  • Once the semolina dumplings are cooked, they will sink. Set the soup aside and adjust with salt and pepper if necessary.

Notes

  • The boiled vegetables can be served with this soup. If you do not want to serve them, you can use them to make a veggie mayo salad.
