Ingredients
6-7 Red bell peppers
1 cup of water
3 tablespoons vinegar
2 tablespoons sugar
Salt
A splash of neutral-flavored oil (sunflower / grapeseed)
Directions
- Roast the bell peppers on an open flame or using a hand torch until black spots appear on the skin. Place the bell peppers in a zip-lock bag or cover them with some tin foil and set them aside until they are easy to handle.
- In a large bowl, add the water, sugar, vinegar, and a pinch of salt and stir until the sugar and salt dissolve. Then add in the oil.
- When the bell peppers are slightly cooled, peel the skin and any black spots. Try to keep them as whole as possible.
- Place the cleaned bell peppers in the bowl with the vinegary mix and let it sit for at least 30 minutes. It is best to make as much as you can serve in one sitting.
Notes
- You can also use frozen baked or roasted bell peppers; just let them thaw very well before adding them to the vinegary mix.
