In our case, we like to go overboard with our list of ingredients. We have a hefty sauce, quick pickled onions, fried pork, mushrooms, scrambled eggs, lettuce, and cheese.

But we have two methods that we use: a large cutting board and a 20-liter water bottle, or a large cutting board and one of us literally sits on it. Be careful, though; you have to let the weight go on the sandwich slowly. If the entire weight goes on suddenly, it will most definitely burst!

1 whole bread, around 800 grams
500 grams mushrooms
500-600 grams sliced pork leg
6 eggs
8 slices of good, melting cheese
1/4 cup wine
4 lettuce leaves
3 slices of smoked and salty ham
Vegetable oil for frying (5-6 tablespoons)
- Onion Pickle
2 medium red onions
1 teaspoons allspice
3 bay leaves
1 teaspoons sugar
2 teaspoons salt
1 teaspoon black pepper corns
3 tablespoons vinegar
Boiling water to cover
- Homemade sauce
2-3 tablespoons ketchup
1 tablespoon mayo
1/2 tablespoon Dijon mustard
Directions
- Start with the easiest part of the recipe, and that’s making the sauce. Combine all the sauce ingredients, give them a good stir, and set it aside for now.
- Continue by making the quick-pickled onion. Cut and clean the onions, thickly cut them, and add them to a small jar. Add the pickle spices and top off with boiling water. Tightly close the lid and set it aside for about 1 hour.
- Clean the mushrooms and cut them to your liking. Season the meat slices, place them in a pan over medium heat, and fry them in vegetable oil. Once the meat slices are ready, set them aside, and in the same pan, add the mushrooms and the cooking white so we can deglaze all the flavors left from the meat. Cook the mushrooms until the wine and water are reduced to a beautiful sauce.
- Break the eggs into a bowl, season with some salt and ground black pepper, and fry on low heat to get some nice and silky scrambled eggs. Once ready, cut off the top of the bread and scoop out as much as possible of the crumb. Carefull not to make any holes in the bread.
- Start building up your sandwich. Add some of the cheese slices to the bottom of the bread. Add half of the hot omelette so the cheese starts melting. Add half of the thinly sliced pork and half of the sauce. Top with the salty ham slices and the lettuce leaves. Drain and sprinkle on top the red onion pickle. Continue with the whole quantity of mushrooms (and the sauce, if you want). It’s time for a new layer of cheese, pork pieces, homemade sauce, the second half of the omelette and some leftover crumb to seal the mix.
- Place the bread lid back on top, and tightly wrap the sandwich in plastic wrap. Make sure to give this a few runs so everything is sealed up. Place the sandwich on a flat surface, cover it with a cutting board, and place something heavy on top so the sandwich will flatten.
