Fried zucchini slices: quick and easy!
Oh boy, oh boy, how you will love this recipe! Not only does the fried zucchini slices recipe incorporate an amazing vegetable and a very easy batter, but it’s also very fast and easy to do.
First of all, all hands are on deck here. The little ones can definitely help you make this recipe. Either with organizing or salting and peppering the slices or by dipping the slices in the flour and eggs. It’s just fun, and maybe a little messy. One of my fondest memories is of my dad adding salt and pepper to the slices from the craziest height in history (in my eyes, as a child).
Another fun part of the fried zucchini slices is that they can be served with basically any sauce you like. When I made the recipe and filmed it, I served the slices with a simple yogurt and fresh dill sauce. But they can be served with a mayo-mustard-ketchup sauce, a tzatziki sauce, or any other sauce that is fresh. My favorite one is my sandwich sauce.

Ingredients
2 medium zucchinis
3-4 eggs
300-320 grams of white flour
Neutral oil for cooking
Salt to taste
Ground black pepper to taste
Optional: Other spices of your liking (Cajun, Italian seasoning, a mix of onion and garlic powder, etc.)
Directions
- Clean and cut the zucchinis into slices. Season the slices on both sides with salt and pepper. Set aside and drain the resulting juices from the zucchinis. Take two bowls and add the flour to one and the eggs to the other. Beat the eggs thoroughly.
- Place a pan over medium heat and add the oil to heat up. Coat each slice of zucchini with flour and the eggs and place it in the heated oil. Cook until golden brown on both sides. It pairs perfectly with homemade yogurt and dill sauce.
