Ingredients

  • 1 large carrot

  • 3 medium horseradish roots

  • 1 cup water

  • 20–25 milliliters vinegar

  • 1 tablespoon sugar

  • 1/2 teaspoon salt

Directions

  • Clean the carrot and horseradish and grate them on the smallest holes of a grater. Keep in mind that horseradish makes the air pungent when grated!
  • In a bowl, mix the water, vinegar, and sugar and stir until the sugar fully dissolves. Add the grated veggies to the liquid mix and let sit for at least 4 hours in the fridge.

Notes

  • Place the mix in a jar and keep it in the fridge for up to a month. This pickle mix can be served as a side or used as an ingredient in ham rolls (link).
