Made with a blend of grated cheeses, butter, flour, milk, and flavorful seasonings, this sauce comes together in just 20 minutes. Ingredients
2-3 types of grated cheese, about 100 grams each
1 ½ tablespoons white flour
70 grams unsalted butter
150 – 200 ml whole milk
Salt to taste
Black pepper to taste
A pinch of nutmeg
Directions
- In a pot over medium heat, add the unsalted butter. Once heated, add in the white flour and stir until the mix changes color to a golden brown. Once the color changes, start adding the milk while stirring continuously. The mix should reach a thick consistency.
- Start adding the grated cheese while stirring. Once the mix is well combined, taste and adjust with milk if the sauce is too thick and salt if necessary. Add the black pepper and finely grated nutmeg. Taste again and adjust the seasoning to your liking. If you want some sharpness in the mix, you can add some cheddar cheese or blue cheese—or both.
Notes
- My favorite combinations so far are: 1) Mozzarella, pressed cheese and bellow’s cheese, OR 2) pressed cheese, Mozzarella and Blue cheese, OR 3) pressed cheese, Mozzarella and Gorgonzola. Choose the combination that makes you dance and enjoy!
